This world hurts my heart lately. It’s enough to want to shut down and hide, but I refuse, damn it.
I recently had to write myself a prescription for FOOD, DRINK & CONVERSATION and thankfully my friend Rebecca was able to fill it. We enjoyed some much-needed girl time while dining on fresh pasta tossed with garden tomatoes and basil. We also sipped on a refreshing, summery concoction of sparkling wine and green tea while a summer storm rolled through. Rebecca was kind enough to share her recipe with me and I, in turn, am sharing it with you as a part of a Summer Drink Series.
With this recipe, I’m also including a prescription for YOU for FOOD, DRINK & CONVERSATION with as many people as you cherish to fill it.
Now, let us toast to being stubborn/bold enough to continue loving and enjoying life in this, many times, dark and fretful world.
Sparkling Wine and Green Tea Refresher
This drink is great for a crowd. A bottle of sparkling wine and green tea go a long way!
To start, lightly muddle a couple leaves of fresh mint with 1 teaspoon of extra-fine sugar (more or less depending on your taste and/or the dryness of wine you are using).
This would also be a great opportunity to add a splash of the homemade lavender simple syrup that I shared last month!
Add the mint and sugar to a small glass (I’m using a 12-ounce Bonne Mama jar–my favorite drink glasses) and pour in enough chilled green tea to reach 1/3rd of the way up the glass. Stir until the sugar dissolves.
Top with twice as much sparkling wine. You can use Prosecco, Spumante or Champagne in any sweetness you prefer.
If you choose a drier wine, it’s less calories. So serve cake, too.
Toss in a few berries if you have ’em and enjoy the crisp, fresh, summery-ness of Rebecca’s Sparkling Wine Green Tea Refresher!

- 1 teaspoon extra-fine sugar
- 3 large mint leaves
- 1/3 cup chilled green tea
- 2/3 cup chilled sparkling wine, any sweetness
- Frozen berries, optional
- Lightly muddle mint and sugar. Place in a 12-ounce glass. Stir in green tea until sugar is dissolved. Pour wine over the top. Add frozen berries and serve.
