That, my friends, is roasted Hatch green chiles.
For those of you who are unfamiliar with Hatch, it’s a little town in the southern half of New Mexico known for its fields of delicious green chiles…and not much else. I grew up an hour or so away from Hatch, and every year come mid August grocery stores would stock this pepper and roast it on site by the drum-full. The smell of roasting green chile is one of those things I miss most about home.
Thankfully, this tradition has caught on in our Texas town and now, for a couple weekends each August, you can purchase your chile and have it roasted on site. It’s easy to go crazy and buy twenty pounds, but how do you use it all? Trust me, it’ll go faster than you think.

Green Chile Recipe Round-Up
My favorite uses for this recipe:
- as a base for green chile pork stew
- as an enchilada sauce
- spooned over goat cheese and served with chips
This dish is pure love. Add chiles to the sauce, fill the enchiladas with chiles, top the dish with chiles, go chile crazy!
I could eat gallons of this soup.
Wait, come to think of it, I probably already have thus far in my lifetime. 🙂
This crustless quiche is a hit! I make it over and over again, adding sausage one time and goat cheese the next.
Here are some everyday dishes that love a little taste of New Mexico:
No canned soup or blocks of fake cheese here. Just simple, straightforward ingredients. A perfect canvas for green chile.
This dish makes a filling weekday lunch. Just swap out the peas and celery seeds for chopped green chiles and a pinch of roasted cumin seeds.
Top with Monterrey Jack cheese, sausage and green chile or swap out the marinara for some green chile sauce (recipe above). Whatever. It’s pizza, and pizza is hard to screw up.
Tomatoes, cucumber, celery, green chile. Sounds like a winner.

You can always tell a New Mexican by the way they put green chile in everything. So I think I’ll just save time and tell you to put it in everything. 🙂
